This is one of the best pizzas I've ever made. After several attempts, I learned the art of perfecting pizza. I always wanted to create a recipe that involves every item in the pizza to be home made. So I came up with this one, that involves majority of the ingredients made at home. Surprisingly preparation was not time consuming, which everyone of us would like.

In this post, I've shared the recipe for the pizza base, marinara sauce and the pickled jalapenos. My advice is to make the dough first, let it ferment. In the mean time, pickled jalapenos can be prepared in 10 or 15 minutes maximum and the sauce in 30 - 45 minutes. Every minute you spend in making this pizza is worth it. If you don't get jalapenos, prepare using green chilli, which will be a bit spicier than the jalapenos. But you can bring down the spiciness by reduce the number of green chilli or by deseed the green chilli or even both.

Ingredients:

Homemade Pizza:

1 Cup Marinara Sauce
1/2 Grated Mozzarella Cheese
1/4 Cup Pickled Jalapenos or Green Chillies
1/4 Cup Thinly sliced capsicum
1 Tsp Oregano
2 Tsp Olive Oil  
Pizza base

 Pizza Base Dough:

3 Cups All-purpose flour/Maida/Whole Wheat Flour + 3 Tbsp. for sprinkling
1/2 Cup Water
1/2 Cup Milk
1.5 Tbsp. Active Dry Yeast
3 Tbsp. Olive Oil
2 Tbsp. Sugar
1.5 Tsp Salt


Marinara Sauce:

3 Medium Sized Tomatoes
1 Tsp Pepper powder
2 Garlic pods
3 Cups Water
2 Tsp Salt
1 Tsp Oregano
2 Tbsp. Olive Oil

Pickled Jalapenos:

2 Jalapenos
1 Tsp Oregano
1/4 Cup Water
1/4 Cup White Vinegar
2 Tsp Salt
1 Tsp Sugar

Method:

Pizza Dough Preparation:

1.      Add all the pizza dough ingredients in a large bowl and mix them well to form a soft dough. 



2.      Add 2 or 3 tsp of flour while mixing the dough to avoid sticking. Place the dough in a floured bowl and cover it with a plastic wrap or a clean towel. Place the dough in a warm place for 1 hour.


3.      The dough should become double in size after an hour and will be ready to be rolled into pizza.



Pickled Jalapenos:

Prepare the pickled jalapenos at least 1 hour before adding it to the pizza.

1.      For the pickled jalapenos - wash, dry and slice the jalapenos and keep it aside. If using green  chillies, after slicing wash them in a strainer to remove the heat of the chillies.
2.      Heat a sauce pan, add 1/4 cup water, 1/4 cup white vinegar, 2 tsp salt, 1tsp sugar and 1 tsp oregano. Mix the ingredients well and let it boil.
3.      Now add the sliced jalapenos or green chillies into the boiling mixture and turn off the heat after 2 minutes. Let it cool at room temperature. Pickled jalapenos are now ready.


Marinara Sauce:

1.      In a sauce pan, add 3 cups water and the whole tomatoes. Blanch the tomatoes until the skin cracks.


2.      Remove the tomatoes skin, mash and let it cool at room temperature. Once the tomatoes are cooled, add them to a mixer/blender along with 1 tsp pepper powder, 2 garlic pods grated, 2 tsp salt, 1 tsp oregano. Blend everything well to a fine puree.



3.      Heat a sauce pan, add 2 tbsp. olive oil and the tomato puree. Let it cook at low heat for 30 minutes or until the sauce reaches the required consistency.



Pizza dough, Marinara sauce and pickled jalapenos are ready. You can make two 12 inch pizzas with this dough. Let us start making the pizza. Preheat the oven at 180 degree Celsius.

1.      In a 12 inch pizza pan, sprinkle the flour, take half of the risen dough and flatten the dough on the pan.


2.      Pour in the prepared marinara sauce and spread the sauce over the dough.


3.      Add the grated cheese over the sauce evenly. 


4.      Now place the sliced capsicum and pickled jalapenos as you wish. Sprinkle some oregano.

5.      Finally add 2 tsp olive oil over the prepared pizza.
6.      Place the pizza in the preheated oven and cook for 15 - 20 minutes. 


7.      Serve the pizza hot with the sauce of your choice.
